I made these pupcakes for Theo’s first birthday, and then perfected the recipe in time for Charlie’s second birthday! Can you believe my little fur baby is two years old today?! Carrot and zucchini are some of my pups favourite veggies, and they are even good for them too!
We planned a little party for Charlie’s birthday, a get together at the park with all Charlie’s favourite fur friends! But… it wouldn’t be a party without cake! These pupcakes were made with all dog friendly ingredients, although they aren’t too nutritious for them, dogs shouldn’t have too many grains and fillers… As a sometimes food and treat they are great though, everything in moderation!
Prep Time: 15 minutes.
Cook Time: 15-20 minutes.
Serves: 45 mini pupcakes.
1/2 a zucchini.
1/2 a cup of rolled oats.
2 cups of self-raising flour.
3/4 cup of buttermilk.
1 tablespoon of vegetable stock (I used Thermomix Veggie Stock, but any stock would do).
Step 1. Preheat your oven to 180°C and grease your mini cupcake tray with butter. Then mash your bananas up in a large bowl.
Step 2. Grate your carrot and zucchini and then add it to the banana mixture.
Step 3. Add the oats and eggs into the mixture and mix well.
Step 4. Next place your flour into the bowl and start combining it all together.
Step 5. While you are working the flour into the mixture add the buttermilk until it is all combined.
Step 6. Finally, add in your veggie stock, or the stock of your choice and mix it all together one last time.
Step 7. Scoop the mixture into the prepared tins, fill the cupcake pans completely and sprinkle with a few left-over oats. Bake in the oven for about 15-20 minutes, or until a skewer comes out clean.
