I love warm winter desserts during the colder seasons… and there is something so completely comforting with this delicious bread and butter pudding!
Prep Time: 1 hour and 15 minutes.
Cook Time: 40-45 minutes.
Serves: 8 People.
1 loaf of white bread
room temperature butter
400ml of thickened cream
400ml of milk
1/2 cup of castor sugar
rind from 1 orange
2 teaspoons of vanilla essence
2 teaspoons of cinnamon
Step 1. Preheat your oven to 180°C and grease a large oven proof dish. Start by slicing your loaf of bread, cut off the crusts and butter both sides of each slice. Cut each slice into quarters and line your prepared dish with the bread.
Step 2. In a separate bowl add your eggs, cream, milk, sugar, orange rind, vanilla, cinnamon and whisk thoroughly.
Step 3. Pour your mixture evenly over your bread, sprinkle brown sugar and cinnamon on top and set it aside to soak for an hour.
Step 4. Once it has been left to sit bake it in your preheated oven for 40-45 minutes, or until the custard has set and it is golden brown on top.
Serve while warm with ice-cream and a dusting of icing sugar.
Note: Popular variations include sultanas, or other dried fruits. I personally don’t like sultanas so I omitted them from this recipe, but they can be added very easily by scattering them amongst the layers of buttered bread, before your pour the mixture over it.
